Ingredients

  • Tagliatelle: 400 g
  • Cream: 125 g
  • Ham: 150 g
  • Mushrooms: 100 g
  • A spoon of oil or butter: 50 g
  • Salt and pepper
  • 1/2 glass of white wine
Pasta “paglia e fieno” takes its name from the particular variation of Tagliatelle, in fact the form and colour (yellow and green) of this kind of pasta are similar to the straw.

Preparation

First of all, melt the butter over a low flame on a cooking pan. Meanwhile cut into cubes or slices the ham and put it with the mushrooms in the pan. Pour the white wine and wait until it evaporates, at this point add the cream and let it cook for few minutes: Be careful! It’s important to avoid that the cream dries too much (keep low flame).
When pasta is ready mix all together, then add a pinch of pepper and… here we are!
